RECIPES FOR GRAD STUDENTS

Microwaveable Baked Potato

Ingredients:
1 potato
Topping (butter, your favorite salad dressing, sour cream, etc.)

Wash potato and cut a deep slit from one end to the other to let out the steam.

Microwave on high for 5 minutes (more for large potatoes) or until soft. Top it with whatever you like.

Or try using a sweet potato or yam:

Wash and cut as before. Microwave on high for 7-8 min or until soft (these take a bit longer). For tasty awesomeness, top with butter/margarine and brown sugar (or marshmallow – but only microwave for 15sec max! Incidentally, baked marshmallows will turn out nicely crisped if you have the hour to bake them in a yam)

Potatoes are cheap and they bake easily, quickly and surprisingly well in the microwave – who knew?

Salsa mac and cheese

Ingredients:
Pasta (works best with larger, spiral noodles)
Cheese (cheddar works well)
Salsa

Cook pasta, drain, then melt the cheese in the pan with the pasta. After well mixed, add salsa to taste. If real cheese is too expensive, use boxed Macaroni and Cheese instead – the salsa will add a nice kick to this cheap dish a lot of us eat way too often.
